Domaine L’Oratoire Saint Jean d’Aureilhan: The Promise of a Great Languedoc Wine

Overlooking Lake Salagou in Liausson, Domaine L’Oratoire Saint Jean d’Aureilhan is a rising star in the Languedoc wine scene. Founded in 2021 by Franck Soulayrol—son of a winemaker and nephew of the renowned Vaillé family (La Grange des Pères)—this 6-hectare estate, cultivated organically, produced a remarkable red wine from its very first vintage: powerful, silky, and distinctive.

A Vineyard Rooted in Biodiversity

Located in the Coteaux du Salagou PGI, the estate benefits from a terroir of schist, limestone, molasse and marl soils, in a hot, dry Mediterranean climate. The estate’s viticulture is based on biological principles and living viticulture: minimal tillage, respect for natural cycles, manual harvesting. This approach allows us to express all the richness of the Salagouen landscape in a wine with a strong personality.

L’Oratoire Saint Jean d’Aureilhan Rouge 2021: A Promising First Vintage

The estate’s red wine is an original and ambitious blend:

  • 50% Mourvèdre – for structure and depth

  • 40% Syrah – for spice and roundness

  • 10% Sangiovese – for freshness and liveliness

The grapes are destemmed, no inputs are used, and the wine is aged for 24 months in barrels, giving it a velvety, elegant texture.

Tasting

To the eye, the wine has an intense black color with purplish highlights. The nose reveals a basket of red and black fruits (cherry, blackberry, blackcurrant), with smoky, spicy and vanilla notes. On the palate, the attack is full-bodied, powerful yet balanced, with a dense body and a tangy, almost Italian finish. A seductive wine for today, but one that will benefit from a few years’ ageing to allow its maturation to mellow.

A field to keep an eye on

Languedoc winegrowing, often perceived as a land of innovation, finds here a rare expression, between Languedoc tradition and Tuscan finesse. L’Oratoire Saint Jean d’Aureilhan stands out as a precious discovery, alongside established references, but with the ardor of up-and-coming estates.
