Olivier Jullien founded Mas Jullien in 1985, at a time when few believed in the quality potential of the Languedoc. Rejecting heavy, oaky, soulless wines, he opted from the beginning for a unique approach: working with native grape varieties, respecting soils and natural cycles, and constantly seeking balance, freshness and character. He quickly abandoned overly rigid appellations, choosing instead the freedom of IGP labels to assert his style. His work is rooted in a deep respect for life and time, with no chemical inputs, gentle vinification, and minimal intervention. Olivier Jullien is now a mentor to a whole generation of Languedoc winemakers.
A Scattered Vineyard Between Terrasses du Larzac and the Buèges Valley
Mas Jullien’s vineyards cover around 18 hectares, spread over numerous small plots cultivated organically. These vines, located around Jonquières, Montpeyroux, Saint-Privat and the Buèges valley, benefit from a remarkable diversity of soils: schist, limestone, red clay, rolled pebbles… Each terroir brings its own nuance and vibration. The climate, marked by cool nights and the influence of nearby mountains, gives the wines an unexpected freshness for the region. Mediterranean Grapes Interpreted with Finesse
Mas Jullien mainly works with traditional southern grapes: Grenache, Syrah, Mourvèdre, Cinsault and Carignan for reds; Grenache Blanc, Carignan Blanc, Roussanne, Viognier and Chenin for whites. But here, there’s no standardized blending: each cuvée tells the story of a place, a plot, a vintage. Olivier Jullien selects grapes based on the identity of the soil and the potential of each harvest, without following recipes. All grapes are harvested by hand. Fermentations are slow, using indigenous yeasts, and often whole-cluster. Aging takes place in foudres, jars or demi-muids, depending on the wine’s needs—without extraction or disguise.

Among the estate’s key wines, Lous Rougeos stands as an icon. It is the estate’s flagship red, powerful and deep, with remarkable aging potential, sourced from the oldest vines. La Brune expresses a single historic terroir, with Cinsault and Syrah leading the blend, showing mineral tension and elegance. Les États d’Âme, in both red and white, offers a freer, fruit-forward expression. The Mas Jullien Blanc is among the great white wines of southern France, combining texture, tension, salinity and complexity.
