Compared with the more expansive Méal, Ermitage Le Pavillon 2021 is deeper and more concentrated, with more pronounced tannins and a medium to full-bodied, rich, deep palate. Made from the granite soils of the Bessards area, its deep purple colour is followed by classic notes of pure blackcurrant, cracked pepper, iron and fiery embers. I don't think the 2021s will require long ageing, but this one will need at least 3 to 5 years. This is a brilliant Hermitage. Jeb Dunnuck
