"La Colline des Dames" is a Pinot Noir cuvée from Alsace, specifically from the Frauenberg terroir. Vinification involves semi-carbonic maceration at a cool temperature of around 12/14°C in foudre, followed by natural fermentation with indigenous yeasts at low temperature. No inputs, including sulfur, are added. As soon as it opens, "La Colline des Dames" reveals a veritable basket of fresh fruit that literally bursts into the glass: notes of cherry, wild raspberry, grenadine and bitter orange are revealed. On the palate, this wine has a very slender, incredibly juicy half-body.. A true delight to be savoured without moderation!
