Like all of Anne and Jean-François Ganevat's négociant cuvées, "De toute beauté" celebrates the harmonious blending of Gamay grapes from their native land with the estate's old Jura grape varieties. The Gamay comes from a variety of terroirs, complemented by forgotten varieties such as Petit Béclan, Gros Béclan, Geusche, Argant, Peurion, Isabelle and Enfariné. The vines are cultivated with care and respect, and vinification, as always with Monsieur Ganevat, is natural... naturally! Vinification is by old-fashioned semi-carbonic maceration, at low temperature (12-14°C), in truncated-conical vats, with indigenous yeasts and no added sulfur. This "De toute beauté" cuvée is composed of 70% Gamay and 30% forgotten Jura grape varieties. A deep, fruity wine with a long finish.
