Terres d'Encre Saint-Joseph comes from 30-year-old vines grown at a density of 7,000 vines per hectare in the commune of Chavannay. Its spicy, mineral profile makes it exceptionally well-suited to gastronomy. Because of the vineyard's very uneven terrain, mechanization is impossible, making it necessary to work entirely by hand. This wine is aged for one year in barrels, without the use of new wood.
