Due to the persistent climatic challenges affecting the Jura and resulting in limited yields, Jean-François Ganevat has turned to other regions for the purchase of grapes over the years. He offers cuvées for the trade, made from grapes grown organically by his winegrower friends, which he then vinifies himself. In this case, it's a Beaujolais Gamay, from Chiroubles to be precise, which has undergone semi-carbonic maceration before fermenting with indigenous yeasts. No pumping over or punching down is carried out to limit extraction, and the wine is aged for two years in foudres. This red wine is bottled without fining, filtering or adding sulfur.
